Having shown a natural talent from a shockingly young age, her abilities have only become more renowned in the last couple of years. She has won awards and run bar programs in some of Canada’s most highly regarded venues. Having recently relocated east to be closer to commitments in New York, she has made her way to the bar at the revered Toronto restaurant, The Harbord Room (89 Harbord Street).
Evelyn presents a rum based cocktail recipe that is easy to make and serious fun for entertaining house guests on these ever warmer spring nights. With your help she just might be able to represent Canada on the global stage soon.
“Just In Thyme” | Evelyn Chick’s entry into the global Bacardi Legacy challenge.
In her own words, “I’d like to keep that perfect time to have a cocktail by sharing my recipe. Four simple ingredients you can recreate anywhere. I wanted to share this cocktail with the ones I love, who challenge me everyday to be better at what I do.
Slowly I will reveal reasons why I chose the key ingredients in the cocktail. I will also be taking the cocktail travelling around the globe and attempt to have someone from each time zone re-create it.”

1.5oz Bacardi Superior 0.5oz Yellow Chartreuse 0.5oz Honey Syrup (1:1 dilution honey to water) 0.75 oz fresh lemon juice 4 dashes Chocolate Bitters 1 sprig fresh Thyme
Combine all ingredients in cocktail shaker, shake with ice and fine strain into cocktail coupé. Garnish with a sprig of thyme.
