3 part Gibson Finest 12 YR
1 part Licor43
1 part lemon juice
2 part fresh carrot juice
3 dashes Angostura Bitters
1 egg white

Combine all ingredients in a mixing glass, dry shake, then add ice and shake at half power to aerate. Fine strain into a chilled old fashioned glass over fresh rocks. Garnish with carrot ribbon or the traditional lemon wedge. Simple and tasty.

*Behind the bar – use a copper tin and include the spring from a Hawthorne strainer during shake to increase the body of meringue.
